Stumptown Manor Breakfast Favorites

As promised, here are a few of my personal (and my guests) favorite breakfast recipes:

Breakfast Quiche

3/4 cup cottage cheese

2cups milk

1 c. Shredded Cheddar or mix of cheeses

4 -5 Eggs

1/2 cup Bisquick

sprinkle with salt and pepper

1 cup …optional veges (my favorite is broccoli or shredded zucchini) or meat, bacon or ground sausage.

Veggies go in raw, meat needs to be pre-cooked. Combine all ingredients and mix well or use blender. Pour into large greased pie plate.

Put your veggies and meat in the bottom of pan. Pour juice mixture over top of veges or meat.. Bake at 350 for 1 hour. Yeilds 6 servings. After baking is finished, I add some cheese on top and let it set about 10 minutes before serving.

Baked Oatmeal

3 cups quick-cooking oats

1 cup brown sugar

1 tsp. cinnamon

1 tsp. salt

2 tsp. baking powder

1 1/2 cup milk

1/2 cup butter, melted

2 eggs

In a mixing bowl, combine all ingredients and mix well. Spoon into greased 9″ square baking pan. Bake at 350 for 40-45 minutes. Serve warm with milk. Yield 6-8 servings.

10 Minute Coffee Cake

1 box yellow cake mix

1 small box instant vanilla pudding

2 eggs

1 1/3 cup water

1 tsp. vanilla

1/3 cup oil

Crumbs Mix together and set aside

1 cup flour

1 cup brown sugar

1/4 cup butter, softened

4 tsp. cinnamon

Mix in a bowl cake mix, pudding, oil, eggs, water, and vanilla. Pour half of cake mix into a greased 9″ X 13″ pan. Alternate cake mix and crumb mixture for top. Bake at 350 for 30 minutes.
